If you're in the mood for a bold, refreshing twist on taco night, let me introduce you to this fire-roasted eggplant taco with Chipotle mayo. It’s smoky, creamy, peppery, and just the right amount of kick.
Whether you’re a plant-based eater or just love inventive, vegetable-forward meals, this taco is a fast favorite.
Why This Works
🌱 Vegan-friendly (just use vegan mayo!)
🔥 Flame-roasted for serious flavor
🥑 Avocado + arugula balance the Chipotle heat
⏱ 20-minute prep makes it perfect for weeknights
Ingredients
1 whole eggplant
Mayonnaise (or vegan mayo)
Chipotle peppers
1 ripe avocado
A handful of arugula
Corn tortillas
Step-by-Step Instructions
🔥 1. Roast the Eggplant
Turn on your gas burner and place the eggplant directly over the flame.
Let it char on one side for 3–4 minutes, then rotate. Repeat for 4–5 turns until the skin is blackened and the eggplant is soft and slightly collapsed.
Place the eggplant in a covered bowl or container to steam for a few minutes while you prep the rest.
🌿2. Make the ChipoTle Mayo
In a small bowl, combine:
2/3 cup of mayo (or vegan mayo)
2-5 Chipotle peppers (to taste)
Stir until smooth. Start small—Chipotles are punchy. Add more for bolder heat.
Want it smooth? Throw it in a blender and blend the chipotles and mayo.
🥑 3. Prep the Avocado
Slice or mash your avocado. Keep it rustic and simple—it balances the heat.
🔪 4. Peel & Slice the Eggplant
Once the eggplant is cool enough, peel off the blistered skin. Don’t worry if some char remains—it adds flavor.
Slice the soft interior into long, taco-friendly strips.
🔥 5. Toast the Tortillas
Using the same burner, toast your corn tortillas directly over the flame. Flip until lightly browned or charred.
They should puff slightly—that’s when you know they’re perfect.
🌮 6. Build Your Tacos
Layer it up:
Spread Chipotle mayo
Add roasted eggplant
Top with arugula
Finish with creamy avocado
Serve warm.
Optional Add-Ons
Lime wedges
Flavor Notes
These tacos are all about contrast:
Smoky eggplant
Creamy mayo
Spicy Chipotle
Peppery arugula
Buttery avocado
Each bite is bright, satisfying, and seriously crave-worthy.
From fire to flame to fresh—this might just become your go-to taco twist.
