If you think green beans are boring, this dish is about to change your mind. We’re talking flame-kissed beans, crackling sesame seeds, garden-fresh tomatoes, and a fiery wasabi mayo that ties it all together.
Finished with a sprinkle of nori and mint, this is one of those quick dishes that feels gourmet but takes less than 20 minutes from pan to plate.
What Makes This Dish Pop
🔥 Charred to perfection for that smoky, caramelized bite
🌱 Can be made fully vegan (just use vegan mayo!)
🧂 Big flavors from simple ingredients
⏱ Minimal effort, maximum flavor
Ingredients
1 pound green beans (trimmed)
1 tablespoon coconut oil
A handful of cherry tomatoes (halved)
1 fresh chili pepper (optional, for heat)
1–2 tablespoons toasted sesame seeds
1–2 teaspoons sesame oil
Mayonnaise (or vegan mayo)
Wasabi paste (squeeze tube)
Seaweed snack sheets (like nori), crumbled
Fresh mint (optional, for garnish)
Step-by-Step Instructions
🧹 1. Prep the Green Beans
Trim the ends of your green beans. It might be the most time-consuming part—but it’s worth it. Line them up and trim in batches to save time.
🔥 2. Char the Green Beans
Heat a heavy pan (preferably cast iron) with 1 tablespoon coconut oil until shimmering.
Toss in the green beans and don’t stir right away. Let them sit and sear. You want to develop that edge-of-burnt caramelized char—not burnt, but deeply browned and flavorful.
Sauté until they’re blistered but still snappy—think “tender-crunchy,” not mushy.
🍅 3. Add Cherry Tomatoes & Chili
Toss in a handful of halved cherry tomatoes and sliced chili pepper (to taste). Stir and let the tomatoes warm and soften just slightly, adding a bright, juicy contrast.
🌱 4. Toast the Sesame Seeds
Add 1–2 tablespoons of toasted sesame seeds directly to the hot pan. Let them crackle and pop—that’s the sound of flavor being unlocked. Toast for about 30–60 seconds.
🧴 5. Drizzle Sesame Oil
Turn off the heat and drizzle 1–2 teaspoons of sesame oil into the pan. Stir to coat everything in that rich, nutty aroma.
🌶 6. Make the Wasabi Mayo
In a small bowl, combine:
2–3 tablespoons of mayonnaise (or vegan mayo)
A squeeze of wasabi paste (start with ½ teaspoon and adjust to taste)
Mix well until smooth. This creamy, punchy sauce will be your green bean’s best friend.
🌿 7. Plate & Finish
Plate the green beans and drizzle with wasabi mayo. Then add:
Crushed nori (seaweed snack) for crunch
A few sprigs of fresh mint for a burst of green, garden flavor
Optional Add-Ons
Sprinkle of flaky sea salt
Lime wedge on the side
Julienned cucumber for extra crunch
Flavor Recap
This dish is:
Crunchy
Smoky
Spicy
Creamy
Umami-packed
